Transfer to a bowl, add the remaining ingredients and combine to make a thick mixture. Heat oil for deep frying. Take small portions of the mixture, flatten it to make a round disc and slide into the hot oil. Fry until browned and crisp. Ensure you fry over medium heat, so it gets cooked evenly from inside out. Serve along with a date and tamarind chutney. Chocolate Chip Cookies: Ingredients: Salted butter 1 cup Caster sugar 1 cup Brown sugar 1 cup Vanilla essence 2 tsp Eggs 2 Flour 3 cups Baking soda 1 tsp Baking powder ½ tsp Sea salt 1 tsp Chocolate chips 2 cups Method: Mix flour, baking soda, salt, baking powder. Beat butter and both sugars until combined. Beat in eggs and vanilla until fluffy. Mix in the dry ingredients until combined. Add chocolate chips and mix. Scoop out dough into balls and place them on your prepared cookie sheets. Bake in preheated oven at 180 degrees C for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown. Let them sit on the baking pan for 2 minutes before removing to cooling rack.'
